Type: Ripened goat milk cheese.
Presentation: Uses the same raw materials as our fresh cheeses, although with the addition of lactic fermenting agents. A painstaking ripening process lasting 3 months results in a gentle, aromatic cheese with an excellent flavour, reminiscent of home-made cheeses from the past.
Mainly produced in Extremadura or Portugal, from where it takes its name.
Rind colour: Brown.
Format: Portuguese.
